These light, sponge-like cakes were first 

seen in the Lorraine of France during the 


1700s. A chef to King Louis XV named 

Madeleine is said to have first produced 



them. Baked in pans with a shell shape, 

and adding finely ground almonds, lemon, 



coconut, chocolate and even jam, 

numerous variations are possible.

First enjoyed in Northern Europe's Denmark 


and Sweden, this rolled sheet of yeast-leavened 

sweet bread dough is sprinkled with a 



cinnamon and sugar (or brown sugar) mixture 

over a layer of butter. The prepared dough is 



then rolled, then cut, and baked. 


Deep fried versions are also popular!
